Food stored without labels in coolers; grease and debris throughout kitchen and storage areas; no certified manager with allergen training.

Key Findings

Food removed from original packaging was stored in coolers, walk-in cooler, and dry storage without proper labeling identifying what the food items were.
Grease buildup, food debris, and dirt accumulated on floors under cooking equipment, along walls, and in corners throughout prep, dishwashing, storage, and basement areas.
Dust buildup observed on walk-in cooler fans, light shields in cooking area, and ceiling and wall vents in prep and storage areas.
No certified food service sanitation manager on staff had completed required allergen awareness training within the required timeframe.

INSTRUCTED TO PERSON IN CHARGE TO PROVIDE A LABEL REFLECTING THE FOOD ITEM'S NAME WHEN FOOD HAS BEEN REMOVE FROM ITS ORIGINAL PACKAGING.
