Key Findings

• Ice machine contained excessive black slimy buildup on interior parts that was contaminating the ice bin. Machine was shut down and must be cleaned and sanitized before use.
• No certified food manager was on duty during food preparation and service of items like brisket, pork, beans, and rice. Manager didn't arrive until 12:25 p.m.
• Several employees lack current food handler training certificates, and the person in charge does not have a certified food manager certificate.
• Hand sinks have slow drains and lack proper signage; food storage containers are not labeled with contents when not in original packaging.
