Key Findings

Extensive rodent infestation with approximately 75 mouse droppings observed on floors and walls in rear and kitchen prep areas. Additional pest control service required.
Two refrigeration units operating at dangerously high temperatures (55°F and 54°F) instead of required 41°F or below, causing 30 lbs of meat and fish to be discarded.
Handwashing sink at rear prep area had inadequate hot water temperature (63°F instead of required minimum 100°F), and employee restroom handwash signage was missing.
Refrigerated food items found at unsafe temperatures: pork at 57.1°F, chicken at 60.1°F, and fish at 58.5°F. No thermometers installed in coolers to monitor temperatures, and food storage containers lacked proper labels.

OBSERVED EVIDENCE OF RODENT ACTIVITY ON THE PREMISES. OBSERVED APPROXIMATELY 75 MOUSE DROPPINGS ON THE FLOOR OF THE REAR PREP AREA ALONG ALL WALLS AND ALONG WALLS IN KITCHEN PREP AREA. MANAGEMENT INSTRUCTED TO CLEAN AND REMOVE ALL RODENT DROPPINGS FROM ALL AFFECTED AREAS. ADDITIONAL PEST CONTROL SERVICE IS NEEDED TO ELIMINATE THE PEST ACTIVITY. PRIORITY FOUNDATION #7-38-020(A).
