Fail

A routine, unannounced visit by a city health inspector.

Approximately 50 live black flies found throughout bar, prep areas, and dining room during inspection.

Key Findings

  • About 50 small black flies were observed flying throughout the main bar, tasting room, prep area, beverage station, dishwashing area, and dining room. Pest control recommended and pest activity must be eliminated.
  • Vacuum sealing machine was used on temperature-controlled foods without required HACCP plan or variance approval. Approximately 65 lbs of food including short ribs, chicken thighs, salmon, pork belly, and ricotta salata were voluntarily discarded.
  • No chemical test strips were available for low-temperature dish machines in prep and bar areas to verify sanitizer strength.
  • Hand sinks in the main bar and tasting room lack proper splash guards to prevent contamination of stored glassware and equipment.

Key findings are derived directly from the inspector's notes from the Chicago Department of Public Health. See the full violation notes below.
