  • Low-temperature warewashing machine in basement produced zero sanitizing residual (minimum 50 PPM required). Machine tagged out of service; staff must use three-compartment sink until repaired.
  • 1/4-inch gap at rear exit door allows pest entry. Must seal all outer openings.
  • Milk crates used as shelving in prep and storage areas. Must replace with proper shelving that sits 6 inches off floor for cleaning access.
  • Water-stained ceiling tiles in kitchen and burned-out light bulb above prep cooler need replacement.

OBSERVED LOW TEMPERATURE WAREWASHING MACHINE LOCATED IN THE BASEMENT DISH AREA NOT PROPERLY SANITIZING. THE SANITIZING RESIDUAL CONCENTRATION WAS OBSERVED AT 0PPM AT TIME OF INSPECTION. INSTRUCTED NOT TO USE UNTIL EQUIPMENT IS PROPERLY SANITIZING AT A MINIMUM OF 50 PPM. USE THE THREE COMPARTMENT SINK UNTIL DISH MACHINE IS CORRECTED. TAGGED MACHINE. PRIORITY VIOLATION #7-38-025.
