Aug 12, 2024 — Complaint inspection

Conditional

Triggered by a public complaint about this restaurant.

Cooling unit storing raw fish and salsas malfunctioned at 65°F, requiring immediate removal of all temperature-sensitive foods.

Key Findings

  • A refrigeration unit in the prep area failed to maintain safe temperature (65°F instead of 41°F or below) while storing fish ceviche and house-made salsas; all affected foods were removed and the unit was tagged for repair.
  • No certified food service manager was present during preparation of temperature-sensitive foods like shrimp and fish ceviche, and food handlers lacked current food handler training certificates.
  • An ice machine's internal lid had brown slime and mold buildup dripping directly onto ice used for human consumption; the ice was removed and the machine was cleaned on-site.
  • Approximately 75 pounds of unlabeled oysters were stored in cardboard boxes without required identification information (harvest dates, location, certification number); the shellstock was voluntarily discarded.

Key findings are derived directly from the inspector's notes from the Chicago Department of Public Health. See the full violation notes below.
