Key Findings

• Approximately 60 lbs of cooked meats and prepared salads in walk-in coolers had no date labels or expiration dates; all prepared foods kept longer than 24 hours must be labeled with a 7-day maximum expiration date.
• Bakery prep handwashing sink was blocked by milk crates and inaccessible; soap was missing from the bakery sink and paper towels were missing from the deli sink.
• Pre-packaged crema prepared on-site contained no allergen warning labels, and prepared foods on display lacked proper labeling with business name, address, and ingredients.
• Bulk foods and spices were not labeled with product names, and no splash guard separated the handwashing sink from the hot holding food display prep area.
