• About 25 mouse droppings discovered on the floor beneath wire storage racks next to the walk-in freezer. Pest control service required.
• Chili was thawing at room temperature in the food prep area instead of using approved thawing methods.
• Extensive buildup of grease and food residue on cooking equipment, prep tables, shelves, and storage racks throughout the facility.
• Walls and floors in the food prep area are dirty, particularly under and behind cooking equipment. Gaps along the wall and floor near dry storage need to be sealed.
