Raw brick walls, moldy caulking, and holes throughout kitchen need immediate sealing and repair.

Key Findings

  • Raw brick wall behind customer toilet and prep sink area has open cracks and holes that must be sealed to be smooth and cleanable.
  • Blackened, moldy caulking found at prep sink, fry slicer, and three-compartment sink—all must be replaced and black substance removed.
  • Two-door cooler on cook's line has torn rubber door gaskets requiring replacement.
  • Items stored in closets and under shelving throughout facility must be elevated off floors; paper towels cannot be used as cooler liners.
