Manager on duty lacked required sanitation certificate when food was being prepared and served.

Key Findings

  • Person in charge during inspection did not have a valid Chicago sanitation certificate; manager had to be called and arrived an hour later while TCS foods were being prepared.
  • Bulk salt and sugar containers were not labeled with product names.
  • Two coolers on the cook line have torn rubber door gaskets; one cooler door has exposed insulation and is in poor repair.
  • Ceiling tiles and vent covers above the pizza oven are extremely dirty with grease; walls at the three-compartment sink and cook line cooler also have grease buildup; washroom has an unsealed hole in the wall.
