Key Findings

• Over 60 mouse droppings observed on floors and shelves in dining area, storage, prep area, and beverage area. Manager instructed to call exterminator and sanitize all affected areas.
• Dead insects and roaches found on glue boards in the prep area.
• Soiled wiping cloths stored directly on prep tables instead of in sanitizing solution between uses.
• Extensive grease buildup and food debris accumulated on cooking equipment, shelving, coolers, freezers, and prep surfaces throughout the kitchen. Rust deposits also found on prep table bottoms.
